This is one of the healthiest and easiest recipes you can whip up with only 10 min of prep time.
I use my Instant Pot but you could also throw it all in a slow cooker for several hours. Another good thing about this recipe is that you can substitute and add ingredients if you forget to buy something.

In your Instant Pot add together:
1 can of black beans (drained and washed)
1 can of hominy (drained and washed) *Hominy makes this recipe amazing but if you want, you can sub corn too.
1 can of fire roasted diced tomatoes
2 tomato & chicken bouillon cubes
2 cups of water
1 pound of boneless chicken
1 can of red enchilada sauce (you can sub taco seasoning and 2 cans of tomato sauce)
1 diced onion
1/2 diced bell pepper (I use green, but use whatever you have)
1 small handful of fresh chopped cilantro (about 2 tbps)
Set Instant Pot for 25 min on high pressure if your chicken is thawed. If frozen, do 35 min on high. Add salt to taste when it’s done cooking. Top with tortilla chips, fresh avocado, cheese and more cilantro.
